Rack of Lamb with Brinjal potatoes / Mint & Yoghurt Dressing

Ingredients

  • 1 x 7-bone rack of lamb, French trimmed 

  • 1 tbsp grapeseed oil 

  • 1 tsp ground cumin 

  • 1 tsp madras curry powder 

  • 1 tsp Kashmiri chilli powder  

  • 1 tsp garam masala 

  • 1/2 lemon juiced  

  • 1kg new potatoes, blanched 

  • 1 tbsp lamb fat  

  • 1 tbsp brinjal pickle  

  • 200g natural yoghurt  

  • 60g mint 

  • 60g coriander  

  • 1 bunch of English asparagus  

  • 25g curry leaves  

  • Pinch of salt
